What's Cookin' Good Lookin' v.4

I unfortunately really have no source for this meal. I have just heard about them and kind of made them up as I go. It was pretty delicious for how healthy it was though!

I started out with Spaghetti Squash. I have never tried this. I wasn't even sure if I even liked squash that much. After cutting it in half, I put it in the oven for about 30 minutes. When it came out, I shredded it with a fork, and to my surprise it really looked just liked spaghetti. I added some butter and it was done. I'm not sure if I cooked it too long, not enough, or that's how it was supposed to taste. It was very crispy. I mixed it with the other things I made and couldn't tell a difference though. Have any of you ever made spaghetti squash before? How is it supposed to taste?

Next for the meal was mashed cauliflower. This is one of my favorites that I rarely get to eat because Dustin hates it. You make it just like mashed potatoes. Boil some cauliflower, mash it up, add some butter, salt, and pepper, and enjoy!

The asparagus I cooked on the skillet in a small amount of boiling water. I added small amounts garlic powder, onion powder, and lemon pepper. This too, was delicious. I pretty much snacked on it for the rest of the week.

Enjoy!

Dustin helping me cut the squash. I was too weak to do it myself.

What was left of the squash

  2. spaghetti squash can be cooked to taste, similar to pasta. If you don't want it to be hard, microwave it whole in a bowl with a little bit of water for 5 mins. Take it out and use an oven mit before you try to cut it because it will be hot. Cut it in half and put it in oven on a cookie sheet open side up for 30 mins. Then shred it with a fork. I like to mix pesto and goat cheese with it and sprinkle with parmesean cheese! :)

  3. I recently made Spaghetti Squash for the first time too! I was surprised how tough it was to cut through the middle. I used pasta sauce and it was pretty delicious, nutritious, and easy. I need to try the cauliflower!
